Makhana Grades Explained: Sizes, Suta and Quality
By Aamir Raza (Mr Makhana) · 1 October 2026

How makhana grades work in trade — size, colour, wholeness and popping quality — and how to choose the right grade for retail, gifting or manufacturing.
Why grading matters
Two bags of makhana can look similar at a glance and still differ a lot in value. Grading sorts popped makhana so buyers get a consistent product. For a retailer, that means a pack that looks the same every time; for a manufacturer, it means predictable results in flavouring and roasting.
Size is the main factor
In the trade, makhana is often graded by the diameter of the popped kernel. Local terms such as “suta” are used in some markets to describe size bands. Larger pieces are generally valued more highly. Because naming conventions differ between traders, always ask for the size range in millimetres or a clear written description.
Colour and appearance
A clean, bright ivory colour is preferred. Light brown flecks from the seed coat are natural. Heavily discoloured pieces are usually separated into lower grades.
Wholeness and popping
Well-popped, whole pieces with a light, airy structure are the goal. Broken pieces, under-popped kernels and hard centres reduce quality and are sorted out in good grading.

Moisture and freshness
Properly dried makhana is crisp. Excess moisture shortens shelf life and affects texture. Ask how the product is stored and packed, and check crunch when you sample.
Matching grade to use
A simple way to think about it:
- Premium retail and gifting: larger, whiter, whole pieces
- Flavoured snacks: consistent mid-to-large sizes that coat evenly
- Cooking and food service: practical mid-size grades
- Manufacturing or grinding: smaller or mixed grades may be suitable
