How to Store Makhana So It Stays Crunchy
By Aamir Raza (Mr Makhana) · 9 October 2026

Practical tips to store makhana at home and in a shop: airtight containers, humidity, re-crisping and shelf-life checks.
Moisture is the enemy
Makhana is light and porous, which is exactly why it is so crunchy — and why it soaks up moisture from the air. Most storage problems come down to humidity.
At home
Follow a few simple habits:
- Reseal the pouch tightly straight after use
- Move opened makhana to an airtight glass or steel jar
- Store in a cool, dry cupboard away from the stove and sunlight
- Avoid the fridge, where condensation softens makhana
- Use a dry spoon or clean, dry hands
Bringing back the crunch
If makhana turns soft, dry roast it in a heavy pan on low heat for a few minutes, stirring constantly, until a piece snaps cleanly. Let it cool fully before sealing it again.

In a shop or warehouse
Retailers should keep stock off the floor, away from damp walls and direct sunlight, and rotate stock first-in, first-out. Check best-before dates on every delivery.
Signs makhana is past its best
Softness can usually be fixed, but a stale or rancid smell, visible mould or an off taste means it should be discarded. Always follow the best-before date on the pack.
Packaging matters
Good packaging — barrier pouches and zip closures — protects crunch for much longer. Munch Misty packs are designed with this in mind; see the collection to choose yours.
Frequently asked questions
Should I refrigerate makhana?
No. Condensation in the fridge makes it soft. Keep it airtight in a dry cupboard.
Can soft makhana be fixed?
Usually yes — dry roast it briefly on low heat.
